Follow this recipe to make genuinely crispy chicken wings in the oven using baking powder, coated in a sticky, sweet, and spicy honey sriracha glaze.

  • 2 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 1/4 cup sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with aluminum foil and place a wire rack on top of the foil.
  2. Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
  3. In a medium bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the wings in a single layer on the wire rack, ensuring they do not touch.
  5. Bake for 25 minutes. Flip the wings over and bake for another 20 minutes.
  6. While the wings bake, prepare the sauce. Combine honey, sriracha, soy sauce, rice vinegar, and garlic powder in a small saucepan. Heat over medium-low heat, stirring until the mixture simmers and thickens slightly, about 3 minutes. Remove from heat.
  7. Remove the wings from the oven. Increase the oven temperature to 450 degrees Fahrenheit (230 degrees Celsius).
  8. Toss the hot, crispy wings in the honey sriracha sauce until fully coated.
  9. Return the glazed wings to the wire rack. Bake for a final 5 to 7 minutes to set the glaze and caramelize the sauce. Watch closely to prevent burning.
  10. Remove from the oven and serve immediately.

  • Use aluminum-free baking powder for the best results on the skin.
  • Do not skip drying the wings; excess moisture prevents crisping.
  • If your sauce seems too thick after heating, add one teaspoon of water to thin it slightly before tossing the wings.
