Follow this recipe to make juicy chicken thighs with a sticky honey soy glaze and perfectly crispy edges.

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil

Instructions

  1. Pat the chicken thighs completely dry using paper towels. This step is key for crispiness.
  2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and pepper to make the marinade.
  3. Place the chicken thighs in a shallow dish and pour half of the marinade over them. Turn to coat. Reserve the remaining half of the marinade for the glaze later.
  4. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours, as the soy sauce can break down the meat.
  5. Remove the chicken from the marinade and discard the used marinade. Pat the chicken skin dry again.
  6. Heat the vegetable oil in a large, oven-safe skillet over medium-high heat until shimmering.
  7. Place the chicken thighs skin-side down in the hot skillet. Do not overcrowd the pan; cook in batches if necessary.
  8. Sear the chicken, undisturbed, for 6 to 8 minutes until the skin is deep golden brown and very crispy.
  9. Flip the chicken thighs. Transfer the skillet to a preheated oven at 400°F (200°C).
  10. Bake for 15 to 20 minutes, or until the internal temperature reaches 165°F (74°C).
  11. While the chicken bakes, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat and cook for 3 to 5 minutes, stirring constantly, until the sauce thickens slightly into a glaze.
  12. Remove the chicken from the oven. Brush the sticky honey soy glaze generously over the chicken thighs.
  13. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra crispy skin, place the seasoned thighs under the broiler for the last 1-2 minutes after glazing, watching carefully to prevent burning.
  • Serve this chicken over steamed rice with a side of steamed broccoli or green beans.
  • If you prefer boneless, skinless thighs, reduce the searing time to 4 minutes per side and the baking time to 12-15 minutes.
