1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 cup broccoli florets
1 red bell pepper, sliced
1 cup sliced carrots
1/2 cup low-sodium soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
Cooked rice, for serving (optional)
Green onions, sliced, for garnish (optional)
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and mostly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the broccoli, bell pepper, and carrots to the same skillet. Cook, stirring occasionally, for 4-5 minutes until the vegetables are crisp-tender.
While the vegetables cook, whisk together the soy sauce, honey, rice vinegar, ginger, and garlic in a small bowl.
Pour the sauce mixture into the skillet with the vegetables. Bring the sauce to a simmer.
Return the cooked chicken to the skillet. Stir to coat everything in the sauce.
Stir the cornstarch slurry again and pour it into the simmering sauce. Cook, stirring constantly, for 1-2 minutes until the sauce thickens into a glaze.
Remove from heat. Serve immediately over rice, if desired, and garnish with green onions.
Notes
You can substitute the vegetables with snap peas, mushrooms, or sliced onions based on what you have available.
For a spicier flavor, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
If you prefer thicker chicken pieces, adjust the initial cooking time to ensure they reach an internal temperature of 165°F (74°C).
