Prepare this flavorful honey soy glazed chicken with rice and broccoli quickly for a simple weeknight dinner.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cups cooked white or brown rice
  • 2 cups fresh broccoli florets
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Whisk together soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil in a small bowl to make the glaze. Set aside half of the glaze for serving.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the skillet and cook until browned on all sides, about 5 to 7 minutes.
  4. Pour the reserved half of the glaze over the chicken. Cook, stirring constantly, until the sauce thickens and coats the chicken, about 2 to 3 minutes.
  5. While the chicken cooks, steam the broccoli florets until tender-crisp, about 4 minutes.
  6. To assemble the bowls, divide the cooked rice among four bowls. Top the rice with the glazed chicken and steamed broccoli.
  7. Drizzle the remaining reserved glaze over the chicken and vegetables. Sprinkle with sesame seeds before serving.

Notes

  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
  • For faster cooking, slice the chicken thinly before cutting into pieces.
  • Use pre-cooked rice to save additional time.
