2 cups cooked, shredded chicken
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup red or green grapes, halved
1/4 cup chopped pecans
1 stalk celery, finely chopped
Instructions
Place the shredded chicken in a medium bowl.
In a separate small bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth. This is your dressing.
Pour the dressing over the chicken. Mix gently until the chicken is evenly coated.
Fold in the halved grapes, chopped pecans, and chopped celery.
Taste the salad and add more salt or pepper if needed.
Cover the bowl and chill in the refrigerator for at least 30 minutes before serving to allow flavors to combine.
Notes
You can use rotisserie chicken for quick preparation.
For a lighter version, substitute half of the mayonnaise with plain Greek yogurt.
