4 bone-in, skin-on chicken thighs
1.5 lbs Yukon Gold potatoes, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon salt
0.5 teaspoon black pepper
0.5 cup Dijon mustard
0.25 cup honey
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1 teaspoon dried thyme
Instructions
Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
In a large bowl, toss the cut potatoes with the olive oil, salt, and pepper. Spread the potatoes in a single layer on the prepared baking sheet.
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, Worcestershire sauce, minced garlic, and dried thyme to create the sauce.
Place the chicken thighs skin-side up among the potatoes on the baking sheet.
Brush about half of the honey mustard sauce evenly over the tops of the chicken thighs.
Bake for 25 minutes.
Remove the pan from the oven. Brush the remaining sauce over the chicken and gently toss the potatoes to coat them with any pan drippings.
Return the pan to the oven and bake for another 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and slightly browned.
Let the chicken rest for 5 minutes before serving directly from the pan.
Notes
For crispier potatoes, you can toss them with 1 teaspoon of cornstarch before adding the oil.
If you prefer boneless, skinless chicken breasts, reduce the total cooking time by about 10 minutes and check for doneness sooner to prevent drying.
You can substitute yellow mustard for Dijon mustard, but you may need to slightly increase the honey for sweetness.
