Make this flavorful honey garlic shrimp served over rice and vegetables in under 25 minutes for a fast weeknight dinner.

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp fresh ginger, grated (or 1/2 tsp ground ginger)
  • 1/4 cup honey
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets
  • 1 tbsp water
  • 1 tsp cornstarch
  • 2 tbsp water (for slurry)
  • Green onions, sliced, for garnish

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the honey, soy sauce, rice vinegar, and red pepper flakes. Set aside.
  2. Cook the vegetables: Heat the olive oil in a large skillet over medium-high heat. Add the broccoli florets and 1 tbsp of water. Cover and steam for 3 minutes until bright green. Remove the broccoli and set aside.
  3. Sauté aromatics: Add the minced garlic and grated ginger to the same skillet. Cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. Cook the shrimp: Add the shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until pink.
  5. Thicken the sauce: In a separate small bowl, whisk the cornstarch with 2 tbsp of water to create a slurry. Pour the prepared honey garlic sauce into the skillet with the shrimp. Bring to a simmer.
  6. Add slurry: Pour the cornstarch slurry into the simmering sauce while stirring constantly. Cook for 1 minute until the sauce thickens and becomes glossy.
  7. Combine: Return the cooked broccoli to the skillet and toss everything gently to coat the shrimp and vegetables in the sauce.
  8. Serve: Divide the cooked rice into two bowls. Top with the honey garlic shrimp and broccoli mixture. Garnish with sliced green onions.

Notes

  • If you do not have fresh ginger, use 1/2 teaspoon of ground ginger in the sauce mixture.
  • For a different vegetable, substitute the broccoli with sliced bell peppers or snap peas; add them when you cook the shrimp.
  • To make this a low-carb option, serve the shrimp over cauliflower rice instead of regular rice.
