6 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
2 tablespoons apple cider vinegar
1 teaspoon cornstarch
2 tablespoons water
Instructions
Pat the chicken thighs completely dry using paper towels. This step is key for crispy skin. Season both sides with salt and pepper.
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Arrange the chicken thighs skin-side up in a single layer on a wire rack set over a baking sheet.
Bake for 25 minutes.
While the chicken bakes, prepare the glaze. In a small saucepan, combine the honey, soy sauce, minced garlic, and apple cider vinegar. Bring the mixture to a simmer over medium heat.
In a separate small bowl, whisk together the cornstarch and water to create a slurry. Pour the slurry into the simmering sauce, whisking constantly until the sauce thickens slightly, about 1 minute. Remove from heat.
After the initial 25 minutes of baking, brush half of the honey garlic glaze over the chicken thighs.
Return the chicken to the oven and bake for another 10 minutes.
Brush the remaining glaze over the chicken. Increase the oven temperature to 425 degrees Fahrenheit (220 degrees Celsius) or switch to the broiler setting (watch closely). Broil or bake for 3 to 5 minutes until the skin is deeply browned and very crisp.
Remove the chicken from the oven and let it rest for 5 minutes before serving.
Notes
For the crispiest skin when baking, place the chicken on a wire rack so air circulates underneath the skin.
If you prefer pan-searing, sear the skin side down in an oven-safe skillet over medium-high heat until golden brown, then flip, brush with glaze, and finish in a 375 degree oven until cooked through.
To make this an air fryer recipe, cook at 380 degrees Fahrenheit for 15 minutes, brush with glaze, and cook for another 5-7 minutes until the skin crisps.
