Make this easy, flavorful honey garlic chicken and rice meal entirely in one skillet for quick weeknight cooking and minimal cleanup.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 cup long-grain white rice, rinsed
  • 2 cups chicken broth
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 2 green onions, sliced, for garnish

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the rinsed rice and toast for 1 minute, stirring constantly.
  4. Pour in the chicken broth, honey, soy sauce, rice vinegar, minced garlic, ginger, and pepper. Bring the mixture to a boil.
  5. Once boiling, stir well, reduce the heat to low, cover the skillet tightly, and simmer for 15 minutes without lifting the lid.
  6. After 15 minutes, stir the chicken back into the rice mixture. Cover again and cook for another 5 minutes, or until the rice is tender and the liquid is mostly absorbed.
  7. Stir the cornstarch slurry into the skillet. Cook uncovered over medium heat for 1 to 2 minutes, stirring gently until the sauce thickens and coats the chicken and rice.
  8. Remove from heat. Let stand for 5 minutes before serving. Garnish with sliced green onions.

Notes

  • For a thicker sauce, increase the honey slightly or use a slightly larger cornstarch slurry.
  • If you prefer more vegetables, add 1 cup of frozen peas or chopped broccoli during the last 5 minutes of cooking.
  • To adjust sweetness, reduce the honey by 1 tablespoon and add 1 teaspoon of brown sugar.
