1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 pound pasta (fettuccine or penne recommended)
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup honey
1/4 cup soy sauce
2 tablespoons apple cider vinegar
1 teaspoon dried Italian seasoning
1/2 teaspoon black pepper
1/4 teaspoon salt
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
1/4 cup reserved pasta water
Fresh parsley, chopped, for garnish
Instructions
Cook the pasta according to package directions until al dente. Reserve 1/4 cup of the starchy cooking water before draining. Set the pasta aside.
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
Pour in the honey, soy sauce, apple cider vinegar, Italian seasoning, pepper, and salt. Stir well and let the sauce simmer for 1-2 minutes until slightly thickened.
Pour in the heavy cream and bring the mixture to a gentle simmer. Cook for 3 minutes, stirring occasionally.
Stir in the Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.
Return the cooked chicken to the skillet. Add the drained pasta and toss everything together until the pasta and chicken are fully coated in the cream sauce.
Serve immediately, garnished with fresh parsley.
Notes
For a richer flavor, substitute half of the heavy cream with half-and-half.
You can add 1 cup of fresh spinach to the sauce when you add the cream for extra vegetables.
If you prefer a thicker sauce, simmer the cream mixture for an extra minute or two before adding the cheese.
