1 tablespoon olive oil
1/2 cup honey
1/4 cup soy sauce
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup water
2 tablespoons cornstarch
2 cups cooked white rice
1 cup broccoli florets
1 red bell pepper, sliced
For the Creamy Sauce: 1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
In the same skillet, combine honey, soy sauce, minced garlic, and grated ginger. Bring to a simmer.
In a small bowl, whisk together the water and cornstarch to create a slurry. Pour the slurry into the simmering sauce, stirring constantly until the sauce thickens into a glaze.
Return the cooked chicken to the skillet and toss to coat completely in the honey garlic glaze. Cook for 1 minute. Remove from heat.
Prepare the Creamy Sauce: In a small saucepan over low heat, combine heavy cream, Parmesan cheese, and Dijon mustard. Stir until the cheese melts and the sauce is smooth. Season with salt and pepper.
To assemble the bowls, divide the cooked rice among serving bowls. Top with the honey garlic chicken, steamed vegetables, and drizzle generously with the creamy sauce.
