Prepare quick, flavorful honey garlic chicken bites served over steamed rice for an easy weeknight meal.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 3 cups cooked white or brown rice
  • 1 cup steamed broccoli florets
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, combine the honey, soy sauce, minced garlic, rice vinegar, and ginger. Bring the mixture to a simmer over medium heat.
  4. Whisk the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 1 minute.
  5. Return the cooked chicken bites to the skillet. Toss gently until all pieces are fully coated in the sticky honey garlic sauce.
  6. To assemble the bowls, divide the cooked rice among four bowls. Top the rice with the honey garlic chicken bites and steamed broccoli florets.
  7. Garnish each bowl with sliced green onions and sesame seeds before serving immediately.

Notes

  • For a crispier texture, you can bake the chicken bites at 400°F (200°C) for 15 minutes before tossing them in the sauce.
  • If you prefer an air fryer method, cook the seasoned chicken pieces at 380°F (195°C) for 10-12 minutes, shaking halfway through.
  • Substitute brown rice for white rice if you prefer more fiber.
