1 large egg yolk
1 teaspoon Dijon mustard
1 teaspoon white wine vinegar
1/2 teaspoon salt
1 cup neutral oil (like canola or grapeseed)
Instructions
Place the egg yolk, Dijon mustard, vinegar, and salt into the jar of an immersion blender or a standard blender.
Blend these ingredients together for about 15 seconds until they are combined and slightly pale.
With the blender running on medium speed, slowly drizzle the oil into the mixture in a very thin, steady stream. This slow addition is key to emulsification.
Continue blending and adding oil until all the oil is incorporated and the mixture thickens into a stable, creamy mayonnaise. This usually takes 1 to 2 minutes after you start adding the oil.
Taste the mayonnaise and add a small squeeze of lemon juice or a dash more vinegar if you desire more tang.
Transfer the finished mayonnaise to an airtight container and refrigerate.
Notes
Use room temperature ingredients for the best emulsification results.
If the mayonnaise separates (breaks), place one teaspoon of water or another egg yolk in a clean bowl and slowly whisk the broken mixture into it until it re-emulsifies.
Homemade mayonnaise tastes best used within one week when stored in the refrigerator.
This mayonnaise is excellent for sandwiches, as a base for tartar sauce, or mixed into potato salad.
