Prepare these high-protein egg bites in a muffin tin for a convenient, make-ahead breakfast perfect for meal prepping and grab-and-go mornings.

  • 1 cup cottage cheese, small curd
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 6 large eggs
  • 1/4 cup milk (any type)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked, crumbled bacon (or other fillings like spinach or ham)

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit. Lightly grease a 12-cup standard muffin tin or use silicone liners.
  2. In a blender, combine the cottage cheese, shredded cheese, eggs, milk, salt, and pepper. Blend until the mixture is completely smooth and creamy. This creates the fluffy texture.
  3. Stir in your cooked bacon or desired fillings into the blended egg mixture.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  6. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
  7. For meal prep, cool completely before storing.

Notes

  • For a smoother texture similar to commercial versions, strain the blended mixture through a fine-mesh sieve before adding fillings.
  • You can freeze these egg bites for up to one month. Cool them completely, place them in a freezer-safe bag, and reheat them directly from frozen in the microwave for 60 to 90 seconds.
