A lean and moist meatloaf recipe using ground turkey and fresh spinach for a nutritious family dinner.

  • 1.5 lbs lean ground turkey (93% lean or higher)
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup whole-grain breadcrumbs
  • 1/4 cup milk (any type)
  • 1 large egg, lightly beaten
  • 1/2 small yellow onion, finely minced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons ketchup (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a standard loaf pan or line it with parchment paper.
  2. In a small bowl, combine the breadcrumbs and milk. Let stand for 5 minutes to soften.
  3. In a large bowl, combine the softened breadcrumbs mixture, ground turkey, chopped spinach, egg, minced onion, minced garlic, thyme, sage, salt, and pepper.
  4. Use your hands to gently mix all ingredients until just combined. Do not overmix, as this can make the meatloaf tough.
  5. Transfer the mixture to the prepared loaf pan and gently shape it into a uniform loaf.
  6. Spread the ketchup evenly over the top surface of the meatloaf.
  7. Bake for 50 to 60 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  8. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing and serving.

Notes

  • For a gluten-free option, substitute the breadcrumbs with 1/2 cup of oat flour or almond flour.
  • To keep the meatloaf moist, use a meat thermometer to check doneness rather than relying solely on time.
  • You can mix finely grated carrots or zucchini into the mixture for extra vegetables.
