- 2 large bell peppers
- 1 pound ground turkey
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup cooked brown rice
- 1/4 cup shredded cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- Cut bell peppers in half lengthwise and remove seeds.
- In a skillet, brown ground turkey with onion and garlic. Drain excess fat.
- Stir in diced tomatoes, brown rice, Italian seasoning, salt, and pepper.
- Spoon turkey mixture into bell pepper halves.
- Place peppers in a baking dish and add about 1/2 inch of water to the bottom of the dish.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle with cheese, and bake for another 10-15 minutes, or until peppers are tender and cheese is melted.
Notes
- You can substitute other grains like quinoa or couscous for brown rice.
- Add other vegetables like corn or zucchini to the turkey mixture for extra flavor and nutrients.
- For a spicier kick, add red pepper flakes to the turkey mixture.
