1.5 lb sirloin or ribeye steak, cut into 1-inch cubes
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Pat the steak cubes dry with paper towels. Season them evenly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until it shimmers.
Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
Sear the steak for 1 to 2 minutes per side until browned on the exterior. You want a good sear but avoid overcooking.
Reduce the heat to medium-low. Add the butter and minced garlic to the skillet.
As the butter melts, tilt the pan slightly and use a spoon to baste the steak cubes with the melted garlic butter for about 1 minute. Stir in the dried thyme.
Remove the skillet from the heat immediately once the butter is foamy and the garlic is fragrant. The internal temperature should register 130-135°F for medium-rare to medium, which keeps the center juicy.
Transfer the steak bites to a clean plate and let them rest for 3 minutes.
Garnish with fresh chopped parsley before serving.
Notes
Use high heat initially to achieve a proper sear quickly; this locks in juices.
Do not skip the resting time, even for small pieces, to allow juices to redistribute.
