Make tender, pan-seared steak bites coated in rich garlic butter and serve them with a bright, fresh chimichurri herb sauce.

  • 1.5 lb sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • For the Chimichurri Sauce:
  • 1 cup fresh parsley, packed
  • 1/2 cup fresh cilantro, packed
  • 3 cloves garlic
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pat the steak cubes dry with paper towels and season them with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan; work in batches if necessary.
  4. Sear the steak for 2 to 3 minutes per side until browned on all sides, aiming for medium-rare to medium doneness. Remove the steak from the skillet and set aside.
  5. Reduce the heat to medium-low. Add the 4 tablespoons of butter to the same skillet.
  6. Once the butter is melted, add the minced garlic and red pepper flakes (if using). Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  7. Return the steak bites to the skillet and toss them quickly in the garlic butter until they are fully coated. Remove from heat.
  8. To make the sauce, combine the parsley, cilantro, 3 cloves of garlic, red wine vinegar, oregano, salt, and pepper in a food processor. Pulse until roughly chopped.
  9. With the food processor running, slowly stream in the 1/2 cup of olive oil until the sauce is combined but still has texture. Do not over-process.
  10. Serve the warm garlic butter steak bites immediately with the fresh chimichurri sauce spooned over the top or served on the side.

Notes

  • For the juiciest steak bites, use a cut like sirloin or tenderloin and cook quickly over high heat.
  • If you prefer a lower-carb side, serve these bites over cauliflower rice or alongside roasted asparagus.
  • You can prepare the chimichurri sauce up to 2 days ahead and store it in the refrigerator.
