1.5 lb sirloin or ribeye steak, cut into 1-inch cubes
4 tablespoons unsalted butter, divided
4 cloves garlic, minced, divided
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
For the Creamy Sauce: 1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon lemon juice
Instructions
Pat the steak cubes dry with paper towels and season them evenly with salt, pepper, and thyme.
Heat 2 tablespoons of butter in a large skillet over medium-high heat until it foams.
Add half of the steak cubes to the skillet, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side until browned on the outside and cooked to your desired doneness (medium-rare is recommended for tenderness). Remove the first batch and set aside.
Repeat the searing process with the remaining 2 tablespoons of butter and the rest of the steak cubes.
Reduce the heat to medium-low. Add 2 minced garlic cloves to the skillet and cook for 30 seconds until fragrant. Return all steak bites to the pan and toss quickly to coat in the garlic butter. Remove the steak from the heat.
Prepare the sauce: In a small saucepan, combine the heavy cream and 2 minced garlic cloves. Heat over medium heat until it just begins to simmer.
Reduce the heat to low and stir in the Parmesan cheese until the sauce is smooth. Do not let it boil.
Remove the sauce from the heat and stir in the lemon juice and parsley.
Serve the garlic butter steak bites immediately with the creamy garlic sauce on the side for dipping or drizzling.
Notes
For the juiciest steak bites, use a cut with good marbling like ribeye or use sirloin and avoid overcooking past medium.
Make sure your skillet is very hot before adding the steak to achieve a good sear quickly.
You can substitute fresh chives for parsley in the sauce if you prefer a milder onion flavor.
