1 pound sirloin steak, cut into 1-inch cubes
1 tablespoon olive oil
1 cup uncooked long-grain white rice
2 cups beef broth
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon dried Italian seasoning
2 tablespoons fresh parsley, chopped
Instructions
Season the steak cubes evenly with salt and pepper.
Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the steak cubes and sear them on all sides until browned, about 3 to 4 minutes total. Remove the steak from the skillet and set it aside.
Add the uncooked rice to the same skillet and toast for 1 minute, stirring constantly.
Pour in the beef broth and bring the liquid to a simmer. Stir in the remaining salt and pepper. Cover the skillet, reduce the heat to low, and cook for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
While the rice cooks, prepare the garlic butter. In a small saucepan, melt the butter over medium heat. Add the minced garlic and Italian seasoning. Cook until the garlic is fragrant, about 1 minute. Do not let the garlic brown.
Once the rice is cooked, remove the skillet from the heat. Gently stir the cooked rice.
Return the seared steak cubes to the skillet, nestling them into the rice.
Pour the melted garlic butter mixture evenly over the steak and rice. Stir gently to combine everything.
Cover the skillet again and let it stand off the heat for 5 minutes to allow the steak to finish cooking through and absorb the flavors.
Garnish with fresh parsley before serving directly from the skillet.
Notes
Use sirloin or strip steak for the best texture in this quick skillet method.
If you prefer a saucier rice, add 1/4 cup more beef broth during step 4.
You can substitute chicken broth for beef broth if desired.
