Prepare a fast and flavorful shrimp and rice dinner using a simple garlic butter sauce. This recipe focuses on speed and minimal cleanup.

  • 1 cup white rice
  • 2 cups water or broth
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth or water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the rice according to package directions using water or broth. Keep warm after cooking.
  2. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  3. Melt 2 tablespoons of butter in a large skillet over medium heat.
  4. Add the seasoned shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  5. Add the remaining 2 tablespoons of butter to the same skillet. Add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  6. Pour in the chicken broth and lemon juice. Bring the mixture to a simmer and cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  7. Return the cooked shrimp to the skillet. Toss gently to coat the shrimp in the garlic butter sauce.
  8. Serve the garlic butter shrimp immediately over the cooked rice. Sprinkle with fresh parsley.

Notes

  • For a quicker meal, use pre-cooked or leftover rice.
  • Add 1/4 teaspoon of red pepper flakes with the garlic for a little heat.
  • If you do not have broth, use water for the sauce base.
