1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter
4 cloves garlic, minced
1 1/2 cups long-grain white rice, uncooked
3 cups chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
Heat olive oil in a large, deep skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
Add the uncooked rice to the skillet and stir constantly for 2 minutes to toast the grains lightly in the garlic butter.
Pour in the chicken broth. Bring the mixture to a boil, then immediately reduce the heat to low, cover the skillet tightly, and simmer for 15 minutes without lifting the lid.
Remove the skillet from the heat and let it stand, covered, for 5 minutes.
Remove the lid. Stir in the heavy cream and Parmesan cheese until the rice is creamy.
Return the cooked chicken to the skillet and stir gently to combine and reheat.
Garnish with fresh parsley before serving.
Notes
Use pre-cooked chicken if you want to reduce the cooking time. Add it back in step 6 just to heat through.
For fluffier rice, rinse the rice under cold water until the water runs clear before toasting it in step 3.
If the rice seems too thick after resting, add a splash more broth or water while stirring in the cream.
