1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried Italian seasoning
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
Season the cut chicken pieces with salt, pepper, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken to the hot skillet in a single layer. Cook for 5-7 minutes, turning occasionally, until the chicken is browned on all sides and cooked through.
Reduce the heat to low. Add the butter and minced garlic to the skillet. Stir constantly until the butter melts and the garlic is fragrant, about 1 minute.
Remove the skillet from the heat. Sprinkle the grated Parmesan cheese over the chicken and toss gently until the cheese melts and coats the bites.
Stir in the fresh parsley. Serve immediately.
Notes
For crispier edges, cook the chicken in batches so the pan is not overcrowded.
You can substitute dried parsley for fresh if needed, but use less.
This recipe works well as a main dish served over rice or pasta.
