1 package (16.5 ounces) refrigerated sugar cookie dough
8 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon lemon zest (optional)
3 cups mixed fresh fruit (strawberries, blueberries, kiwi, mandarin oranges)
Preheat your oven to the temperature specified on the sugar cookie dough package.
Press the refrigerated dough evenly into a 12-inch pizza pan or a large baking sheet lined with parchment paper.
Bake the cookie crust according to the package directions until lightly golden brown. Let the crust cool completely on a wire rack.
While the crust cools, prepare the frosting. In a medium bowl, beat the softened cream cheese until smooth.
Add the powdered sugar, vanilla extract, and lemon zest (if using). Beat until the frosting is light and creamy.
Once the cookie crust is completely cool, spread the cream cheese frosting evenly over the top, leaving a small border around the edge.
