1 loaf (about 1 pound) day-old bread (brioche or challah recommended), cut into 1-inch cubes
6 large eggs
1 cup milk (whole or 2%)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup granulated sugar (for the custard)
1/2 cup granulated sugar (for the topping)
1 tablespoon ground cinnamon (for the topping)
4 tablespoons unsalted butter, melted (for the topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a standard 12-cup muffin tin well or use paper liners.
Place the bread cubes evenly into the prepared muffin cups, filling them about three-quarters full.
In a medium bowl, whisk together the eggs, milk, vanilla extract, 1 teaspoon cinnamon, nutmeg, and 1/4 cup sugar until fully combined.
Slowly pour the egg mixture over the bread cubes in each muffin cup, allowing the bread to soak up the liquid. You may need to gently press the bread down.
In a small bowl, mix the 1/2 cup sugar and 1 tablespoon cinnamon for the topping.
Brush the tops of the soaked bread lightly with the melted butter, then sprinkle generously with the cinnamon sugar mixture.
Bake for 18 to 22 minutes, or until the muffins are set in the center and the topping is golden brown.
Let the muffins cool in the tin for 5 minutes before carefully removing them to a wire rack to cool completely.
Notes
Use slightly stale bread for the best texture; it absorbs the custard better without becoming soggy.
You can prepare the batter and soak the bread the night before, cover the tin, and refrigerate. Add 5 minutes to the baking time if baking directly from the refrigerator.
These muffins freeze well. Cool completely, place in an airtight container, and freeze for up to one month. Reheat in a toaster oven or microwave.
