1.5 lbs boneless, skinless chicken breasts or thighs
1 tablespoon olive oil
1 cup thinly sliced yellow onion (about 1 medium onion)
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup beef broth
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
4 slices Swiss cheese
1/2 cup French fried onions (for topping)
Instructions
Preheat your oven to 375°F (190°C).
Season chicken pieces with salt and pepper.
Heat olive oil in an oven-safe skillet over medium heat. Sear chicken on both sides until lightly browned, about 2-3 minutes per side. Remove chicken from skillet and set aside.
Add sliced onions to the same skillet. Cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
Add minced garlic and dried thyme to the skillet. Cook for 1 minute more until fragrant.
Pour in beef broth and Worcestershire sauce. Stir in Dijon mustard. Bring to a simmer.
Return the seared chicken to the skillet, nestling it into the onion mixture.
Top each piece of chicken with a slice of Swiss cheese.
Sprinkle French fried onions over the top.
Transfer the skillet to the preheated oven.
Bake for 20-25 minutes, or until chicken is cooked through and cheese is melted and bubbly.
Notes
For extra flavor, you can caramelize the onions slowly over low heat for a longer period.
If you don’t have an oven-safe skillet, transfer the mixture to a baking dish before topping with cheese and fried onions.
