1 pound ground breakfast sausage
1 dozen large eggs
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
2 cups diced cooked potatoes
1 cup salsa
12 large (10-inch) flour tortillas
Instructions
Cook the breakfast sausage in a large skillet over medium heat until browned. Drain off any excess grease.
In a large bowl, whisk together the eggs, milk, salt, and pepper.
Pour the egg mixture into the skillet with the sausage. Cook, stirring occasionally, until the eggs are set.
Stir in the shredded cheeses, diced potatoes, and salsa. Mix until well combined.
Warm the flour tortillas slightly to make them pliable.
Spoon about 1/2 cup of the filling mixture onto the center of each tortilla.
Fold in the sides of the tortillas, then roll them up tightly from the bottom to create burritos.
Wrap each burrito individually in plastic wrap, then in aluminum foil.
Place the wrapped burritos in a freezer-safe bag or container.
Freeze for up to 3 months.
To reheat, remove the foil and plastic wrap. Microwave on high for 1-2 minutes, or until heated through. For a crispier exterior, bake in a preheated oven at 350°F (175°C) for 15-20 minutes.
Notes
You can customize the filling with your favorite vegetables, like bell peppers or onions.
For a spicier burrito, add diced jalapeños to the filling.
