10 Everything Bagels, cut into 1-inch cubes
1 pound breakfast sausage
1 medium onion, chopped
1 bell pepper, chopped
8 large eggs
2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
1/4 cup chopped fresh chives
1/4 cup poppy seeds
1 tablespoon sesame seeds
1 tablespoon dried minced onion
Instructions
In a large skillet, cook the breakfast sausage over medium heat until browned. Drain off excess grease. Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
In a large bowl, whisk together the eggs, milk, salt, and pepper.
Add the cubed bagels, cooked sausage mixture, and shredded cheddar cheese to the egg mixture. Stir gently to combine.
Pour the mixture into a greased 9×13 inch baking dish.
In a small bowl, combine the chives, poppy seeds, sesame seeds, and dried minced onion. Sprinkle this mixture evenly over the top of the casserole.
Cover the baking dish with foil and refrigerate for at least 1 hour, or preferably overnight, to allow the bagels to soak up the egg mixture.
Preheat your oven to 350°F (175°C).
Remove the foil and bake for 40-50 minutes, or until the casserole is set and golden brown.
Let stand for 10 minutes before serving.
Notes
For an overnight soak, ensure the casserole is covered tightly with plastic wrap or foil before refrigerating.
You can customize the vegetables by adding mushrooms or spinach.
