1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 lime, juiced
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 cup chopped fresh cilantro
12 small corn or flour tortillas
For the Crema: 1 ripe avocado
1/4 cup sour cream or Greek yogurt
1 tablespoon lime juice
1 tablespoon water (or more for thinning)
Pinch of salt
For Serving: Shredded cabbage or slaw mix
Instructions
In a medium bowl, combine the shrimp, olive oil, lime juice, chili powder, cumin, and salt. Toss to coat and let marinate for 10 minutes while you prepare the crema.
Prepare the avocado crema: Combine the avocado, sour cream or yogurt, lime juice, and salt in a small food processor or blender. Blend until smooth, adding water one tablespoon at a time until you reach a drizzly consistency.
Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer (cook in batches if necessary). Cook for 2 to 3 minutes per side until pink and opaque.
Stir in the chopped cilantro during the last minute of cooking.
Warm the tortillas according to package directions (in a dry skillet or microwave).
Assemble the tacos: Fill each tortilla with cooked shrimp, top with shredded cabbage, and drizzle generously with the avocado crema.
Notes
For extra flavor, add 1/2 teaspoon of smoked paprika to the shrimp marinade.
If you prefer a spicier crema, add a small pinch of cayenne pepper or a dash of hot sauce to the avocado mixture.
Use fresh lime juice for the best taste in both the shrimp and the crema.
