This vibrant, flavor-packed Cowboy Caviar, also known as Texas Caviar, is loaded with black beans, corn, fresh vegetables, and a zesty lime dressing. It is quick to prepare and ideal as a crowd-pleasing dip or side dish.

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup cherry or grape tomatoes, halved
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all your fresh vegetables: halve the tomatoes, dice the peppers and onion, and mince the jalapeño if you are using it. Chop the cilantro.
  2. In a large bowl, combine the rinsed black beans, drained corn, tomatoes, red pepper, green pepper, red onion, jalapeño, and cilantro.
  3. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper to create the zesty vinaigrette dressing.
  4. Pour the dressing over the bean and vegetable mixture.
  5. Gently toss all ingredients together until everything is evenly coated.
  6. For the best flavor, cover the bowl and refrigerate for at least 30 minutes before serving. This allows the flavors to meld.
  7. Serve your Cowboy Caviar chilled or at room temperature with tortilla chips.
