- 3 very ripe, mashed bananas (about 1 1/2 cups)
- 1/2 cup (1 stick) unsalted butter, melted
- 3/4 cup packed light brown sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup semi-sweet chocolate chips
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, mash the ripe bananas until mostly smooth.
- Pour the melted butter into the mashed bananas and stir to combine.
- Add the brown sugar, egg, and vanilla extract to the banana mixture. Mix well.
- Sprinkle the baking soda and salt over the wet ingredients. Stir until just combined.
- Add the flour to the bowl. Mix gently with a spatula until the flour streaks almost disappear. Do not overmix.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- For the moistest bread, use bananas that are heavily spotted or almost black.
- If you prefer a less sweet loaf, reduce the brown sugar to 1/2 cup.
- You can substitute walnuts or pecans for the chocolate chips.
