  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Combine the rinsed and drained chickpeas, black beans, and cannellini beans in a large mixing bowl.
  2. Add the chopped cucumber, bell pepper, and red onion to the bowl with the beans.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper to create the dressing.
  4. Pour the dressing over the bean and vegetable mixture. Toss gently until everything is evenly coated.
  5. Fold in the crumbled feta cheese and fresh parsley, if using.
