1 cup cottage cheese (full fat or 2%)
6 large eggs
1/4 cup shredded cheese (Monterey Jack or Gruyere recommended)
1/4 teaspoon salt
1/8 teaspoon black pepper
Optional Add-in: 1/2 cup cooked, crumbled bacon or diced ham
Optional Add-in: 1/2 cup chopped spinach, squeezed dry
Instructions
Preheat your oven to 300°F (150°C). Lightly grease a 12-cup muffin tin or silicone mold.
In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth and creamy. This step is key for fluffy texture.
If using add-ins, stir the shredded cheese and your choice of bacon, ham, or spinach into the blended egg mixture. Do not overmix.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 20 to 25 minutes. The egg bites are done when they are set in the center and a toothpick inserted comes out clean.
Carefully remove the muffin tin from the oven. Let the egg bites cool in the tin for 5 minutes before removing them.
Serve warm or store them for later meal prep.
Notes
For a true Starbucks sous vide copycat texture, place the muffin tin inside a larger baking pan and fill the larger pan halfway up the sides of the muffin tin with hot water (a water bath). Bake as directed.
These egg bites freeze well. Cool completely, then store in an airtight container in the freezer for up to one month. Reheat in the microwave for 30-60 seconds.
You can substitute Greek yogurt for cottage cheese, but the texture will be slightly denser.
