1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 large head of broccoli, cut into florets
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup honey
1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon minced fresh garlic
1 teaspoon grated fresh ginger
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the cut chicken pieces with olive oil, salt, and pepper until evenly coated.
Arrange the seasoned chicken on one half of the prepared baking sheet.
Place the broccoli florets on the other half of the baking sheet.
In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger to create the sauce.
Pour half of the honey garlic sauce over the chicken, tossing gently to coat. Leave the broccoli dry for now.
Place the baking sheet in the preheated oven and roast for 12 minutes.
Remove the sheet from the oven. Pour the remaining half of the sauce over the broccoli florets and toss them directly on the pan.
Return the pan to the oven and roast for another 8-10 minutes, or until the chicken is cooked through (internal temperature of 165 degrees Fahrenheit) and the broccoli is tender-crisp.
While the dish finishes cooking, return to the small bowl with any leftover sauce. Heat the sauce gently in a small saucepan over medium heat. Whisk in the cornstarch slurry and cook until the sauce thickens slightly, about 1 minute.
Remove the chicken and broccoli from the oven. Drizzle the thickened sauce over the entire pan.
Garnish with sesame seeds, if using, and serve immediately. This is a great low carb chicken broccoli dinner option.
Notes
For a sheet pan chicken and broccoli variation, you can skip the final sauce thickening step and simply toss everything with the full sauce mixture before roasting.
If you prefer a crispier texture, you can broil the dish for the last 1-2 minutes, watching carefully to prevent burning.
