Easy Baked Caprese Chicken

A simple recipe for baked chicken breasts topped with fresh mozzarella, tomatoes, and basil, finished with a balsamic glaze.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices fresh mozzarella cheese
  • 8 thin slices ripe tomato
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish.
  2. Place the chicken breasts in the prepared baking dish. Drizzle with olive oil and sprinkle evenly with oregano, salt, and pepper.
  3. Bake the chicken for 15 minutes.
  4. Remove the dish from the oven. Top each chicken breast with two tomato slices and one slice of mozzarella cheese.
  5. Return the dish to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  6. Remove from the oven. Sprinkle the fresh basil over the melted cheese.
  7. Drizzle the balsamic glaze over the chicken before serving.

Notes

  • You can substitute fresh mozzarella with shredded mozzarella if preferred.
  • For a richer flavor, use store-bought balsamic glaze or reduce balsamic vinegar on the stovetop until thick.
  • This dish pairs well with a side of roasted asparagus or pasta.
