1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon garam masala
1/4 teaspoon cayenne pepper (optional)
1 (15 ounce) can crushed tomatoes
1 cup heavy cream
1/4 cup chopped fresh cilantro, for garnish
Salt and black pepper to taste
Instructions
Season chicken pieces with salt and pepper.
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
Add chopped onion to the skillet and cook until softened, about 5-7 minutes.
Stir in minced garlic and grated ginger, and cook for 1 minute until fragrant.
Add cumin, coriander, turmeric, garam masala, and cayenne pepper (if using). Cook for another minute, stirring constantly.
Pour in crushed tomatoes and bring to a simmer. Return the browned chicken to the skillet.
Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and tender.
Stir in heavy cream and heat through, but do not boil.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
Notes
For a spicier curry, add more cayenne pepper.
If you don’t have heavy cream, you can use half-and-half, but the sauce will be less rich.
Serve with basmati rice or naan bread.
The chicken can be substituted with chicken breast, but cook time may need to be adjusted.
