  • 4 ounces Boursin cheese (or soft herbed cheese)
  • 4 ounces shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced

  • 1/4 teaspoon black pepper
  • 3 large Roma tomatoes, diced small
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt (for topping)
  • Crostini or baguette slices, for serving

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8-inch pie dish or small oven-safe serving dish.
  2. In a medium bowl, combine the softened cream cheese, Boursin cheese, mozzarella cheese, Parmesan cheese, minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Mix until the ingredients are fully incorporated and smooth.
  3. Spread the cheese mixture evenly into the prepared baking dish. This forms the creamy base layer.
  4. Bake the cheese layer for 15 to 20 minutes, or until the cheese is warm and slightly melted around the edges.
  5. While the cheese bakes, prepare the fresh topping. In a separate bowl, combine the diced tomatoes, chopped basil, olive oil, balsamic vinegar, and the remaining 1/4 teaspoon salt. Gently toss to coat.
