Make a rich, creamy, and light chocolate mousse using only three basic ingredients. This no-bake dessert sets quickly and looks elegant.

Ingredients

  • 200g dark chocolate (at least 60% cocoa), chopped
  • 4 large eggs, separated
  • 50g granulated sugar

Instructions

  1. Melt the chopped dark chocolate gently over a double boiler or in short bursts in the microwave until smooth. Let it cool slightly.
  2. Separate the egg yolks and egg whites into two clean bowls.
  3. Whisk the egg yolks into the slightly cooled melted chocolate until fully combined and glossy.
  4. In a separate, clean bowl, beat the egg whites until soft peaks form. Gradually add the sugar while continuing to beat until stiff, glossy peaks form.
  5. Gently fold one-third of the stiff egg whites into the chocolate mixture to lighten it.
  6. Carefully fold in the remaining egg whites in two additions, working until just combined. Do not overmix; you want to keep the air in the mixture.
  7. Spoon or pipe the mousse into small serving dishes or ramekins.
  8. Chill in the refrigerator for at least 2 hours before serving to allow it to set completely.

Notes

  • For the silkiest texture, ensure your chocolate is fully melted and smooth before adding the yolks.
  • Use room temperature eggs for the best volume when whipping the whites.
  • You can make this dessert up to one day ahead.
