Make this easy, cheesy, and crunchy Dorito casserole for a satisfying comfort food dinner. It is a perfect one-dish baked meal for your family or next potluck.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 (4 ounce) can diced green chiles, drained
  • 1 (10 ounce) bag Nacho Cheese Doritos, lightly crushed
  • 1/2 cup water

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is fully browned. Drain off any excess grease.
  3. Stir the cream of chicken soup, cream of mushroom soup, milk, chili powder, cumin, and garlic powder into the skillet with the beef mixture. Cook, stirring constantly, until heated through.
  4. Remove the skillet from the heat. Stir in half of the cheddar cheese, half of the Monterey Jack cheese, and the drained green chiles. Mix well.
  5. Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
  6. Pour the entire beef and cheese mixture over the chip layer. Spread it out evenly.
  7. Top the mixture with the remaining half of the crushed Doritos.
  8. In a small bowl, mix the remaining half of the cheddar and Monterey Jack cheeses with the 1/2 cup of water to create a thin cheese sauce. Drizzle this sauce over the top layer of chips.
  9. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is lightly golden.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • You can substitute ground turkey or shredded cooked chicken for the ground beef to make a different version of this easy casserole recipe.
  • For an extra layer of flavor, use Cool Ranch Doritos instead of Nacho Cheese for a Cool Ranch Casserole variation.
  • To keep the topping crunchy, do not mix all the chips into the base; reserve at least half for the top layer.
