Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
Place the sweet potato cubes in a large bowl. Drizzle with olive oil and toss to coat evenly.
In a small bowl, mix together the garlic powder, paprika, black pepper, and salt. Sprinkle this seasoning mix over the sweet potatoes and toss again until all pieces are coated.
Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crispiness.
Roast for 20 minutes.
Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the potatoes. Gently toss the potatoes on the sheet to coat them lightly with the cheese.
Return the pan to the oven and roast for another 5 to 10 minutes, or until the potatoes are tender inside and the edges are crispy and golden brown.
Remove from the oven, garnish with fresh parsley, and serve immediately.
