1 teaspoon salt

2 large eggs, beaten
1 1/2 cups panko breadcrumbs

4 large flour tortillas
1 cup shredded lettuce
1/2 cup sliced tomato
1/4 cup red onion, thinly sliced
For the Avocado Sauce:
1 ripe avocado
1/4 cup plain Greek yogurt
2 tablespoons lime juice
1 clove garlic, minced
2 tablespoons water (or more, for desired consistency)

Prepare the chicken coating: Mix flour, salt, pepper, and paprika in one shallow dish. Place beaten eggs in a second dish. Place panko breadcrumbs in a third dish.
Dredge each chicken strip first in the flour mixture, shaking off excess. Dip into the egg, letting excess drip off. Coat thoroughly in panko breadcrumbs, pressing gently to adhere.
Cook the chicken: Heat 1 inch of oil in a skillet over medium-high heat to 350°F (175°C). Fry chicken strips in batches for 3-4 minutes per side until golden brown and cooked through. Remove and drain on paper towels. (Alternatively, air fry at 400°F (200°C) for 10-12 minutes, flipping halfway).
Make the avocado sauce: Combine avocado, Greek yogurt, lime juice, minced garlic, water, and salt in a food processor or blender. Blend until completely smooth. Add more water if you need a thinner consistency.
Warm the tortillas: Heat the flour tortillas briefly in a dry skillet or microwave until pliable.
Assemble the wraps: Lay a warm tortilla flat. Spread a generous amount of avocado sauce down the center. Layer with lettuce, tomato, red onion, and the crispy chicken strips.
Fold the wrap tightly and serve immediately.

For extra crispiness, you can lightly spray the breaded chicken with cooking oil before air frying.
Use a good quality, firm avocado for the creamiest sauce texture.
