1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 large eggs, beaten
1 tablespoon water
2 cups panko breadcrumbs

For the Dip:
1/2 cup Dijon mustard
1/4 cup honey
2 tablespoons mayonnaise
1 teaspoon apple cider vinegar
Instructions
Prepare the chicken: Place the cut chicken pieces on a plate.
Set up the breading station: Place flour, salt, pepper, and paprika in a shallow dish. In a second dish, whisk the eggs and water. In a third dish, place the panko breadcrumbs.
Coat the chicken: Dredge each chicken piece first in the flour mixture, shaking off excess. Dip it completely into the egg wash. Finally, press the chicken firmly into the panko breadcrumbs, ensuring full coverage. For extra crispiness, dip the breaded chicken back into the egg wash and then back into the panko.
Cook the nuggets: For baking, preheat your oven to 400F (200C) and lightly spray the nuggets with cooking oil. Bake for 18-20 minutes, flipping halfway, until golden brown and cooked through (internal temperature 165F). For air frying, cook at 380F (195C) for 10-12 minutes, shaking the basket halfway.
Make the dip: While the nuggets cook, whisk together the Dijon mustard, honey, mayonnaise, and apple cider vinegar in a small bowl until smooth.
Serve immediately with the honey mustard dip.
Notes
To make these nuggets ahead of time, bread them completely and place them on a baking sheet lined with parchment paper. Freeze until solid, then transfer to a freezer bag. Cook directly from frozen, adding a few minutes to the cooking time.
Use chicken tenderloins instead of breast meat for a slightly more tender texture.
For a spicier dip, add a dash of cayenne pepper to the honey mustard mixture.
