Make perfectly crispy breakfast potatoes with a fluffy interior using this simple skillet method. These home fries are seasoned with garlic and paprika for a savory side.

  • 2 lbs Russet potatoes, peeled and diced into 1/2 inch cubes
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Rinse the diced potatoes under cold water until the water runs clear. Pat them completely dry with paper towels. This step helps achieve crispiness.
  2. Heat the olive oil and butter in a large, heavy-bottomed skillet over medium-high heat until the butter foams.
  3. Add the dried potatoes to the hot skillet in a single layer if possible. Do not overcrowd the pan; cook in batches if necessary.
  4. Cook the potatoes undisturbed for 8 to 10 minutes until the bottoms are golden brown and crispy.
  5. Flip the potatoes and continue cooking for another 5 minutes.
  6. Reduce the heat to medium. Add the chopped onion and cook until softened, about 4 minutes.
  7. Stir in the minced garlic, paprika, salt, pepper, and thyme. Cook for 1 minute until fragrant.
  8. Continue cooking, stirring occasionally, until the potatoes are cooked through and tender on the inside, about 5 to 7 more minutes.
  9. Remove from heat and serve immediately as a breakfast side dish.

Notes

  • For extra crispiness, cover the skillet for the first 5 minutes of cooking to steam the inside slightly, then uncover to brown the exterior.
  • You can substitute dried thyme with 1 teaspoon of fresh rosemary, chopped.
  • If you prefer an oven-roasted method, toss the raw, dried potatoes with the oil and seasonings and roast on a baking sheet at 425°F (220°C) for 30-35 minutes, flipping halfway.
