Extra Crispy Baked Garlic Parmesan Potato Wedges

Bake potato wedges until they are golden brown and crunchy on the outside, then toss them in a flavorful garlic and Parmesan coating.

  • 4 large Russet potatoes, scrubbed
  • 3 tablespoons olive oil
  • 1 teaspoon baking powder (this helps crispiness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper.
  2. Cut each potato lengthwise into 8 wedges. Do not peel the potatoes.
  3. Place the potato wedges in a large bowl. Drizzle with olive oil and toss to coat evenly.
  4. Sprinkle the baking powder, salt, pepper, and paprika over the wedges. Toss again until every wedge is lightly coated. The baking powder is key for crispiness.
  5. Arrange the wedges on the prepared baking sheets in a single layer. Do not let them touch.
  6. Bake for 20 minutes. Flip the wedges over.
  7. Continue baking for another 15 to 20 minutes, or until the wedges are golden brown and crisp.
  8. While the wedges finish baking, mix the minced garlic, grated Parmesan cheese, and chopped parsley in a small bowl.
  9. Remove the hot wedges from the oven. Immediately transfer them to a large bowl. Sprinkle the garlic Parmesan mixture over the hot wedges and toss quickly until the cheese melts slightly and coats the wedges evenly.
  10. Serve immediately as a side dish or appetizer.

Notes

  • For extra crispiness, soak the cut wedges in cold water for 30 minutes before drying them completely. Pat them very dry with paper towels before oiling.
  • If using an air fryer, cook in batches at 400°F (200°C) for 15-18 minutes, shaking the basket halfway through. Toss with seasoning after cooking.
  • Serve with a side of ranch or sour cream for dipping.
