A hearty and creamy white chicken chili perfect for families. This recipe is designed to bring you closer, one delicious meal at a time.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies
  • 3 cups cooked, shredded chicken
  • 1 cup half-and-half or heavy cream
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Stir in garlic, cumin, chili powder, oregano, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  3. Pour in chicken broth, cannellini beans, and diced green chilies. Bring to a simmer.
  4. Add shredded chicken and cook for 10-15 minutes, allowing flavors to meld.
  5. Reduce heat to low. Stir in half-and-half or heavy cream. Heat through, but do not boil.
  6. Season with salt and pepper to taste.
  7. Serve hot, with your favorite toppings.

Notes

  • For a thicker chili, mash some of the beans against the side of the pot before adding the cream.
  • You can use rotisserie chicken for convenience.
  • Adjust cayenne pepper for your desired level of heat.
