Make this fast, comforting pasta dish featuring fresh spinach in a rich, creamy Parmesan sauce. It is ready in under 30 minutes.

Ingredients

  • 12 oz pasta (fettuccine or penne)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 5 oz fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 cup grated Parmesan cheese
  • 1/4 tsp black pepper
  • Salt to taste

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup of the pasta cooking water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Add the fresh spinach to the skillet in batches, stirring until it wilts completely.
  4. Pour in the heavy cream and broth. Bring the mixture to a gentle simmer.
  5. Reduce heat to low. Stir in the grated Parmesan cheese until the sauce is smooth. Season with pepper and salt.
  6. Add the drained pasta to the skillet with the sauce. Toss to coat everything evenly.
  7. If the sauce is too thick, add the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  8. Serve immediately.

Notes

  • For a richer flavor, add 2 tablespoons of butter along with the heavy cream.
  • If you prefer a tomato element, stir in 1/4 cup of sun-dried tomato paste with the cream.
  • Use fresh, finely grated Parmesan cheese for the best melting results.
