Prepare a flavorful, one-pan chicken dinner featuring tender chicken breasts in a rich, creamy sauce with fresh spinach and Parmesan cheese. This recipe is quick enough for a weeknight.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach, packed
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon butter

Instructions

  1. Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let it burn.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Stir in the heavy cream and bring the mixture to a gentle simmer. Cook until the sauce begins to thicken slightly, about 3 minutes.
  6. Stir in the Parmesan cheese until it melts smoothly into the sauce.
  7. Add the fresh spinach to the skillet. Stir until the spinach wilts down completely, about 2 minutes.
  8. Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce.
  9. Stir in the butter until it melts, adding richness to the sauce.
  10. Serve immediately from the skillet.

Notes

  • For a lower-carb option, use half-and-half instead of heavy cream, though the sauce will be slightly thinner.
  • If you prefer whole spinach leaves, add them at the very end and stir just until wilted.
  • You can add a pinch of red pepper flakes with the garlic for a little heat.
