Creamy Mushroom Chicken with Rich Sauce

Cook tender chicken breasts in a skillet and cover them with a decadent, savory sauce made from mushrooms, garlic, cream, and Parmesan cheese.

  • 2 large chicken breasts, halved horizontally to make 4 thin cutlets
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine (like Pinot Grigio)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken cutlets on both sides with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  4. Add the sliced mushrooms to the same skillet. Cook, stirring occasionally, until they release their moisture and start to brown, about 5 to 7 minutes.
  5. Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
  6. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Let the wine reduce by half, about 2 minutes.
  7. Stir in the chicken broth and dried thyme. Bring the mixture to a simmer.
  8. Reduce the heat to medium-low and slowly whisk in the heavy cream. Let the sauce simmer gently until it thickens slightly, about 3 minutes.
  9. Stir in the grated Parmesan cheese until the sauce is smooth. Taste and adjust seasoning with salt and pepper.
  10. Return the cooked chicken to the skillet, spooning the sauce over the top. Simmer for 1 minute to reheat the chicken.
  11. Garnish with fresh parsley before serving.

Notes

  • Serve this dish over egg noodles, mashed potatoes, or rice to absorb the rich sauce.
  • For a thicker sauce, allow the cream to simmer longer before adding the cheese.
  • If you do not use wine, substitute it with an equal amount of extra chicken broth and a teaspoon of lemon juice.
