Cook tender chicken breasts in a rich, creamy garlic mushroom sauce all in one skillet for a fast weeknight dinner.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the sliced mushrooms to the same skillet and cook until they release their moisture and start to brown, about 5 minutes.
  5. Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
  6. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth reduce slightly for 2 minutes.
  7. Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  8. Reduce the heat to low and stir in the Parmesan cheese until the sauce is smooth and thickened.
  9. Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for 1-2 minutes to reheat the chicken.
  10. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • Serve this dish over rice, pasta, or with crusty bread to soak up the extra sauce.
  • For a lighter sauce, substitute half-and-half for the heavy cream, though the sauce will be thinner.
  • You can add a handful of fresh spinach during the last minute of cooking for added greens.
