This recipe yields a potato salad with a rich, creamy dressing heavily flavored with fresh dill, perfect for picnics or barbecues.

  • 3 lbs Yukon Gold potatoes, scrubbed and quartered
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons yellow mustard
  • 1/4 cup white vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt, plus more for boiling water
  • 1/2 teaspoon black pepper
  • 4 large eggs, hard-boiled and chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup fresh dill, chopped

Instructions

  1. Place the quartered potatoes in a large pot and cover with cold, salted water. Bring the water to a boil and cook until the potatoes are fork-tender, about 15 to 20 minutes.
  2. Drain the potatoes immediately and let them cool slightly for about 10 minutes. While still warm, gently transfer the potatoes to a large bowl.
  3. In a separate medium bowl, whisk together the mayonnaise, sour cream, yellow mustard, white vinegar, sugar, salt, and pepper until smooth. This is your tangy dill dressing.
  4. Pour about half of the dressing over the warm potatoes. Gently toss to coat. The warm potatoes absorb the dressing better.
  5. Add the chopped hard-boiled eggs, celery, red onion, and fresh dill to the bowl. Pour the remaining dressing over the mixture.
  6. Fold all ingredients together carefully until everything is evenly coated. Avoid overmixing to keep the potatoes from breaking down too much.
  7. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  8. Taste before serving and adjust salt or pepper if needed. Serve cold.

Notes

  • Use Yukon Gold or red potatoes; they hold their shape well after boiling.
  • Dress the potatoes while they are still slightly warm for better flavor absorption.
  • For an extra tangy flavor, increase the white vinegar by one tablespoon.
  • You can prepare the dressing up to two days ahead of time.
